Beef Samosas with Cheese (Keema Samosas)

What is in a beef samosa?
Keema samosa refers to a savoury pastry often filled with minced beef, mutton or chicken mixed with different spices. While there are many things you can put into a beef samosa, it is common to include potatoes, curry powder, cumin seed powder, salt, peas and carrots. For this samosa beef recipe, we are making it simpler and more kid-friendly by putting in mozzarella cheese to get that melty beef effect!

Beef Samosas ingredients:
- Curry powder
- Cumin seed powder
- Onions (diced)
- Minced garlic
- Minced/Ground beef
- Potatoes
- Salt
- Water
- Oil
- Cheese
- Egg or flour (egg wash to seal the keep the samosas in tact!)
- Spring roll or Samosa pastry (to make the samosa shells)
How to make beef samosas
1. Folding the samosas
We can start by taking a small amount of pastry and dividing it either into half (for bigger samosas) or three (you will get smaller but more samosas). Folding it may take a few tries before being able to do so nicely (nothing is perfect!) and to seal the samosas at the end with egg wash or flour paste.

2. Making samosa filling
Add the blended ingredients to the uncooked chicken in the wok. At this point, do not switch on the gas yet. We want to make sure that all the ingredients are added and mixed well before starting to cook.

3. Adding the filling to the samosa folds
The best part: Add the cooked samosa filling into the samosa folds. You can choose to have them straight away or keep them in the freezer for 3 – 4 months (we can assure you they won’t last that long!).

Beef Samosas with Cheese
Ingredients
- 1 kg Minced/Ground beef
- 25 g Curry powder
- 30 g Cumin seed powder
- 1 tsp Paprika powder
- 2 Onions diced
- 30 g Garlic minced
- 4 Potatoes peeled and diced
- 60 ml Water
- 60 ml Olive oil
- 3 tsp Salt
- 250 g Mozzarella cheese
- 1 packet Spring roll or samosa pastry
Instructions
Making the samosa filling
- Heat up oil in a pan on medium heat. Add diced onion and minced garlic. Saute them until they are translucent.
- Add minced or ground beef into the pan. Evenly spread the beef in the pan and add curry powder, cumin seed powder, paprika and salt. Mix them well.
- Add water and mix. Let the beef cook for 5 minutes before adding the diced potatoes.
- Continue to add more water to create the pasty beef filling. Let it cook for 30 minutes and ensure to let it cool before adding to the samosa folds.
Making the beef samosas
- Prepare the egg wash or flour paste on the side
- Start folding the samosa triangles and put in the desired amount of cooled samosa filling. Ensure that the fold wraps neatly on the edges.
- Use the egg wash and brush on the last fold of the pastry to create a glue-like texture. Seal the samosa and you're done!
Freezing the samosa beef
- In order to store the samosas for a period of time, ensure that they are arranged flat and vacuum sealed. This will allow you to take out the indivdual samosas easily when you feel like having a tasty savoury snack.
