Craving for a tangy but sweet savoury dish? Look no further, as this is one the easiest (and delicious!) sweet and sour fish recipe you’ll find!
The first time I came across a sweet and sour fish dish was at a local stall where it is one of the dishes served at a big family meal. The fish they used was a fried garoupa fish, covered in a generous portion of sweet and sour sauce. Ooh! The memory and taste of the fish are still vivid in my mind even until now.
How to cook sweet and sour fish fillet?
If you scout the web for the recipe, you will see an infinite number of ways on how you can make a sweet and sour dish but most importantly, how do you make one that requires the least ingredient and the easiest?
The secret to a tasty sweet and sour dish is the sauce itself. Good news, you’ll only need two key ingredients for this sauce: chilli and garlic chilli sauce (yes, you read that right!).
What fish is used for fish fillet?
Most times, we use the type of fish that we personally like. What I would usually look at when choosing the best fish for fish fillet is to look at fishes which cooks well & firm and have minimal to zero bones in it.
Some examples will be cod, red snapper, sea bass or even dory fish! That way, it the fish won’t crumble when frying and you will have no worries taking a huge bite of the fillet.
What are the ingredients I need?
- Fish fillet: For this recipe, we are using frozen cod fillet. You may choose to use other fishes or even fresh fish too
- Chilli Sauce: It gives that good balance of sweetness since it is not a spicy sauce
- Garlic Chilli Sauce: This sauce has a little tangy goodness, that complements the sweetness of the chilli sauce
- Pineapple cubes/sliced: We use canned pineapple to minimise wastage, but you can get the actual fruit if you’d like!
- Bell pepper: You can choose any colour of peppers, but we got the red one
- Onion: Dice it into small pieces for an easier sauté
- Sugar: Yes, you read that right! Nothing like adding a little more sugar to perfect the taste
- Turmeric: This is used to marinate the fish
- Salt: Add a little salt to the marinate to give it a good savoury taste to the fishes
How do you make this sweet and sour fish dish?
- Marinate the fish with turmeric and salt and deep fry the fishes with medium heat until the colour turns light golden brown
- Sauté both nicely diced onion and pepper with one tablespoon of cooking oil.
- Once sautéed, add ¼ cup of garlic chilli sauce and ½ cup of chilli sauce to the wok.
- Add a tablespoon of sugar to the sauce and let it simmer for about 3 minutes.
- Add the deep-fried fishes and sliced pineapple to the sauce. Let it cook to simmer for about 10 minutes and you’re done!
Sweet and Sour Fish
Ingredients
Making the marinade
- 400 g Cod Fish fillet fish of your choice!
- 1 tsp Turmeric
- 1 tsp Salt
Making the sauce
- 1/4 cup Garlic Chilli Sauce Brand used: Maggi
- 1/2 cup Chilli Sauce Brand used: Maggi
- 3/4 cup Water ½ cup if you like to make the sauce slightly thicker
- 1 tbsp Sugar
Remaining ingredients
- 1 whole Onion
- 1 whole Bell pepper used the red pepper
- 5 slices Pineapple diced this into cubes
- 1 tbsp Cooking oil
Instructions
The marinade
- Rinse fish fillets until dry
- Add turmeric and salt to the fish fillets and marinate/mix them well
- Deep fry the marinated fish fillets with medium heat until they turn light golden brown
The sauce
- Sauté diced onion and pepper with one tablespoon of cooking oil
- Once sautéed, add ¼ cup of garlic chilli sauce and ½ cup of chilli sauce to the wok
- Add a tablespoon of sugar to the sauce and let it simmer for about 3 minutes.
Finally, the sweet and sour fish dish itself!
- Add the deep-fried fishes and sliced pineapple to the sauce. Let it cook to simmer for about 10 minutes and you’re done!
