Roti Kirai (Net Pancakes)

Have you been wondering what those yellowish lacy looking net pancakes are? Well, look no further – here is an ultimate guide to making those delicious and simple Roti Kirai (Net Pancakes).

Roti Kirai (or Jala) literally means “bread” and “net”. This delicacy is no stranger (or favourite) to us in Singapore, Malaysia or even Indonesia! Unlike the well-known Roti Prata (or Canai), Roti Kirai has a lighter density and texture to it. It is often eaten during social gatherings be it casual or even during special occasions such as Hari Raya Aidilfitri or Haji – you can basically have them anytime you like.

What is roti kirai made of?

Roti Kirai is essentially made of three key ingredients namely: turmeric powder, flour and egg. Visibly, the yellow colour of the net pancake itself is made from the turmeric powder.

What do I need to make roti kirai?

Thankfully, you don’t really need special tools to make yummy roti kirai, or even a stand mixer to make the batter. However, we do recommend using a special nozzle bottle (pictured below) to help with the pattern making.

Essentially, you will only need the following tools to get started:

  • Ingredients (duh, of course!)
  • Non-stick frying pan
  • Mixing bowl
  • Whisk (or your trusty fork)
  • Bottle with nozzle

What makes a good roti jala?

Well, not that we are an expert or food critic for that matter but the soft texture and fluffiness of the roti kirai definitely are the top criterion for us.

What do you eat with it?

Roti Kirai is best eaten with a hot serving of curry chicken or beef (yummers)! With its fluffy floury texture, it is no secret that curry is such a great compliment. Packed with spicy flavour, the curry gives that extra kick in every bite.

Ingredients

What are the ingredients I need?

  • Flour: Simply put, you can use any flour of your choice such as wheat flour, all-purpose etc. For us, we prefer to use plain flour.
  • Dry powder: Of course, not forgetting our guest star – turmeric powder for the beautiful natural yellow colouring of the roti kirai. Aside from this, you will need salt
  • Wet ingredients: You will need water for mixing, and we recommend using full cream. Alternatively, some people prefer to use coconut milk instead and that is fine as well
  • Eggs: 2 eggs!

How do I make these delicious net pancakes?

Making the batter:

  • Simply mix the dry ingredients first: plain flour, turmeric, and salt in a separate bowl.
  • Use a clean bowl to crack and whisk the egg. Then continue to add susu cair (full cream).
  • Mix the wet and dry ingredients into one bowl and whisk it well

Ingredients
  

  • 200 g Plain flour any other choice of flour is good too
  • 1 tsp Salt
  • 1 tbsp Turmeric Powder
  • 60 g Full Cream (Susu cair) Alternatively, you can use coconut milk
  • 200 g Room temperature water
  • 2 Eggs

Instructions
 

Making the batter

  • Add in the dry ingredients together first: flour, salt and turmeric.
  • Add in the wet ingredients together: Egg (whisked), water and full cream.
  • Combine all ingredients together until smooth and silky.

Making the kirai pattern

  • Transfer the mixture into the nozzle bottle and gently squeeze out the mixture on a non-stick frying pan. Ensure that it is on medium heat.
  • Once the mixture slowly hardens on the pan, fold it into half and half again to your preferred size and shape.

Finish

  • And voila! Serve it on a plate alongside a bowl of hot curry chicken or beef!
